He separated salt water from fresh water, He made dry land and planted a garden, and He made animals and fish. He did all of this before he made man. Think about that for a moment. He created and provided food that we would need even before we were born. So many foods are powerful when eaten raw, but still good for us when cooked and seasoned to taste. We could eat from God’s Garden and be healthier than we are today. God gave us foods to eat that would benefit certain parts of our body.

Look at the beautiful tomato. It has four chambers and when ripe, it is red. The heart has four chambers and is red. I have been told that research shows that tomatoes are loaded with lycopene and are indeed good for the heart and blood.

Other foods high in lycopene are also red in color: watermelon, pink grapefruit, pink guavas, red cabbage and even red chilis.

Our garden always had tomatoes. We ate them green, and cooked them at least 100 different ways. I could write a book on 100 ways to cook and enjoy tomatoes, but this particular recipe for today is for fried green tomatoes.

Fried Green Tomatoes

Ingredients

3 green tomatoes

2 cups vegetable oil

1½ cups self-rising flour

1 teaspoon salt, divided

1 teaspoon black pepper, divided

2 cups buttermilk

2 eggs

Preparation

Wash and slice tomatoes into thick slices, about ¼ inch thick.

Mix buttermilk and eggs together. Add half of the salt and pepper and 1 tablespoon of flour. Mix well. Place tomato slices in the buttermilk and egg mixture.

Mix the remaining flour, salt and pepper together.

Coat each tomato slice in the flour.

Fry in hot oil (approximately 350 degrees) until golden brown, turning two or three times. Cook until each slice is crisp, but do not burn. Drain on paper towels.

Serve hot and enjoy — this is also good with tomato chutney.
