He separated salt water from fresh water, He made dry land and planted a garden, and He made animals and fish. He did all of this before he made man. Think about that for a moment. He created and provided food that we would need even before we were born. So many foods are powerful when eaten raw, but still good for us when cooked and seasoned to taste. We could eat from God’s Garden and be healthier than we are today. God gave us foods to eat that would benefit certain parts of our body.

Eggplants, avocados and pears target the health and function of the womb and cervix of the female, and they look just like these organs. We never grew eggplants or avocados in our garden, but we did enjoy the fruit from our pear trees.

Here is a recipe for my eggplant parmesan. It’s easy to make, so enjoy it while the season gives us fresh eggplant.

Eggplant Parmesan

Ingredients

  • 1 large eggplant, peeled and cut into 1/3-inch slices
  • 2 eggs, beaten
  • 1 1/2 cups seasoned bread crumbs
  • 1/4 cup olive oil
  • 3 cups spaghetti sauce
  • 1/2 lb shredded Mozzarella cheese
  • 1/3 cup grated Parmesan cheese

Preparation

Preheat oven to 350 degress.

Place a layer of eggplant slices in a colander. Sprinkle with salt. Continue layering and salting all eggplant slices. Let stand 30 minutes. Rinse and pat dry.

Dip each eggplant slice in egg and coat with breadcrumbs.

Heat oil in a heavy skillet. Over medium-high heat, fry eggplant in hot oil about 2 minutes per side. Drain on paper towel.

Arrange half the eggplant slices in the bottom of baking dish sprayed lightly with nonstick spray. Spread half the sauce over top. Sprinkle with half the mozzarella and half the Parmesan. Repeat layers.

Bake 25 minutes or until mixture is bubbly hot.
