Our Bible starts in Genesis: “In The beginning God created…”

He separated salt water from fresh water, He made dry land and planted a garden, and He made animals and fish. He did all of this before he made man. Think about that for a moment. He created and provided food that we would need even before we were born. So many foods are powerful when eaten raw, but still good for us when cooked and seasoned to taste. We could eat from God’s Garden and be healthier than we are today. God gave us foods to eat that would benefit certain parts of our body.

Look at the beautiful tomato. It has four chambers and when ripe, it is red. The heart has four chambers and is red. And look at the onion — not as beautiful as the tomato, but it looks like our body cells. Research shows that the onion helps remove waste material from our body cells.

An old wives' tale I remember goes something like this: “If you are sick with a cold, slice an onion and put it near your bed at night. The dark color it turns is from the germs it has absorbed from the air.”

During my childhood, we grew onions as well as tomatoes. We ate onions raw and mama found lots of ways to use them as she cooked our meals. Mama and her cooking can never be replaced.

Here is a recipe for my favorite meatloaf. Naturally I used fresh onions, and you can’t make ketchup without tomatoes!

My Favorite Meatloaf

Ingredients

  • 2 pounds ground beef (I used ground chuck)
  • 4 eggs
  • 2 cups ketchup, divided
  • 1 cup corn flakes
  • 3 cold left over biscuits (or 6 slices white bread, toasted)
  • ½ cup onions, chopped (1 whole onion is not too much for me)
  • 1 tablespoon worcestershire sauce
  • Salt and pepper to taste

Preparation

Preheat oven to 350 degress.

Use a large bowl to mix everything together, saving 1 cup of ketchup. Mix well. Put mixture onto a sheet pan and knead several times as if you were kneading bread. Shape into a loaf and put into an ungreased loaf pan. Bake uncovered for 35-45 minutes until done.

Remove from oven and pour remaining ketchup on top of meatloaf.

Good to the last bite!

Serve with fresh vegetables from your garden.
