RECIPE: A classic comfort food with a twist

Posted

Comfort food may not have an official definition, but people tend to know which foods can hit the spot when they're seeking to get a little homemade reassurance at mealtime. Meatloaf certainly fits that bill for many people, especially those who recall childhood dinners with family where this popular dish was the main course.

Since comfort food is a loosely defined term, there's no shortage of ways to tweak recipes for popular dishes like meatloaf. This recipe for "Pork Meatloaf Stuffed With Spinach and Feta" from Lines+Angles, is a less traditional, yet tasty take on a popular comfort food.

Pork Meatloaf Stuffed With Spinach and Feta

Makes 12 servings

Ingredients

  • 2 3/4 pounds ground pork
  • 2 eggs
  • 3 1/2 tablespoons milk
  • 2 cups quick oats
  • 2 tablespoons oil
  • 1 large onion, finely diced
  • 3 garlic cloves, minced
  • 1 cup fresh parsley, minced
  • 1 teaspoon cumin
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • 1 bunch fresh spinach, chopped
  • 1 egg, beaten
  • 8 ounces feta cheese, crumbled
  • 1/2 cup shredded provolone

Instructions

  1. Preheat oven to 350 F.
  2. Combine pork with 2 eggs, milk, and oats. Set aside.

  5. In a 9" X 13" baking dish, shape 2/3 of meatloaf into a hollow shell.
  6. Combine spinach, 1 egg, and feta cheese. Fill spinach mixture into the hollow cavity of the meat loaf. Cover filling with remaining meat mixture.
