A new establishment called 87 West is coming to downtown Fairhope, located at 212 Fairhope Ave.
The upcoming bar is a new venture from an ownership group that includes sisters Carly and Chelsea Pirtle, Steve Olechnowicz and Amy Eady. The group are no strangers to the dining industry, with Chelsea Pirtle having served in restaurant management roles at places such as Ruby Tuesday and BJ's Restaurant and Brewhouse in Mobile. Carly Pirtle and Eady have previously worked as bartenders at the Dragonfly Foodbar, while Olechnowicz comes from a tech background, owning the tech company Geostream Solutions but was a patron at Dragonfly while Pirtle and Eady were bartending.
After Dragonfly moved out of downtown, the four eventually came together seeking to replicate a similar laid-back environment and clientele in downtown Fairhope. That opportunity came when local realtor Daniel Whitworth leased them the site at 212 Fairhope Ave.
Chelsea Pirtle said the name 87 West is in reference to the longitude and latitude coordinates of Fairhope. When they open, they plan to start out as a bar. Other than some snacks, they will serve only drinks but did not rule out the possibility of adding wider food options in the future.
They will be serving handcrafted cocktails and a wide selection of bourbon and whiskey. Some of the cocktails include the "Mason Jar Mix-Up" with housemaid lemonade, bourbon and blackberries, "Brine Time," which includes pickle brine, gin, pepper and garlic oil, "Lola Island Margarita," which consists of a combination of tequila, coconut, pineapple and a kick of tajin along the rim, and "Basil Berry Gold," which has fresh muddled strawberries in a blend of vodka, honey, lemon and a hint of basil.
They are still in the process of setting up shop, but Chelsea Pirtle told GCM that she expects 87 West to open sometime this summer.
