Make chicken in a Crock-Pot for a weeknight dinner

My mother cooked a lot of chicken. We raised chickens, so this was an affordable meal to prepare for six children and two adults. I never saw Mama cook using a Crock-Pot, but her chicken was always delicious. She had that special touch that can never be replaced. She usually served rice when she cooked chicken, but this recipe uses noodles. Either is good.

This is so tender and tasty. Cooking in a Crock-Pot is great way to have your evening meal ready shortly after you return home from work. It was not unusual for me to leave a meal in the Crock-Pot when I left for work. It never took long to complete that meal by adding vegetables, bread and sweet tea. Here is my recipe for Crock-Pot chicken, to which I have added noodles.

Crock-Pot Chicken with Noodles 

Ingredients

  • 6 chicken thighs, boneless, skinless
  • 2 10.5-ounce cans cream of chicken with herbs soup
  • 1 32-ounce container of chicken broth
  • ½ cup butter
  • 1 12-ounce package egg noodles

Directions

Place all ingredients except noodles in a Crock-Pot. Cook on medium for 5 to 6 hours. Remove chicken and shred into large pieces. Return chicken to pot and add the egg noodles. Cook for 1½ to 2 hours. Serve hot.

This recipe is good served with a cucumber salad and green beans cooked with onions.
