I baked this breakfast cheesecake for a principal’s meeting at the local high school where I worked. It was a big success, and after that, I was always asked to bring it anytime there was a gathering at the school.
I started making this my covered dish of choice anytime I was asked to bring something to a gathering. Functions where covered dishes are requested are always lots of fun. You meet so many nice people, and everyone brings their favorite dish to share. There is always more food than you can possibly eat, and you get the best of the best food from everyone. If you make this breakfast cheesecake once, I can almost guarantee you’ll be asked to make it again. It might just become your signature dish, too!
Breakfast Cheesecake
Ingredients
2 packages Crescent rolls
2 (8 ounce) packages cream cheese, softened
1 ½ cups sugar
1 teaspoon vanilla
1 egg, divided
½ cup nuts, chopped
1 teaspoon cinnamon
1 tablespoon butter
Preparation
Preheat oven to 350 degrees. Place one package of crescent rolls in a lightly buttered 9- by 13-inch pan. Press perforations together creating one sheet, which will become the crust.
Beat cream cheese, 1 cup sugar, 1 teaspoon vanilla and the egg yolk together and spread over the crescent rolls in pan. Place the second package of crescent rolls over the cream cheese mixture to form the top crust.
Beat the egg white and brush on top.
Combine ½ cup sugar, 1 teaspoon cinnamon and ½ cup chopped nuts. Sprinkle on top.
Bake for 30 minutes. Serve warm.
